Turtle Bites

Sharyn Maas brought these to coffee at Anita’s last year and they were a big hit.  It is a very, very easy recipe to make.  Chris loved them so much last year that I drafted him to make some more.  I’ve seen the recipe with other names but I’m partial to Turtle Bites.


48 Rolo candies

48 - 1-1/2” square ‘waffley’ pretzels

48  pecan halves.

Parchment paper


Preheat oven to 250 degrees.


Lay parchment on a baking/cookie sheet and arrange the pretzels on top, with maybe 1/2” or so between them.  You don’t want them touching. 


Place a Rolo in the center of each pretzel and carefully place baking sheet in preheated oven.  Heat for 4 minutes -- the chocolate will begin to look shiny.  You do not want them in there for more than 4-1/2 minutes.


Remove sheet from oven and squash a pecan half on each Rolo.  That’s it.  Cool in auxiliary refrigerator (a Minnesota garage will do nicely) until chocolate has set again.


Try to eat just one.  They’re not cloyingly sweet.  They’re just right.   Makes 48.


Once set they go nicely into a cello bag for gift giving.
